Premium sake Dassai brewed by Japanese company Asahi Shuzo already has a global reputation. Now the company is trying to capitalise on the growing popularity of sake on the other side of the world with a fresh venture. Called Dassai Blue, the label is tailor-made for the US market and produced at a sprawling new brewery in New York City. Asahi Shuzo’s determination to put down roots in the US is as much a reaction to changing tastes at home in Japan as abroad.
