The famous Korean dish kimchi is under threat from climate change because its main ingredient, cabbage, thrives in cooler climates. In South Korea, farmland has become less suitable for growing the vegetable amid rising temperatures. The Rural Development Administration, a state farming think tank, says climate change scenarios predict the amount of kimchi cabbage farming area will shrink dramatically to just 44 hectares in the next 25 years and that the crop will no longer be grown in the highlands by 2090.
