The secret to a great tasting authentic Neapolitan pizza, according to chef Maurizio Ferrini, is in the dough. Ferrini was born and raised in Naples. He perfected his recipe there before bringing it to Casa Don Alfonso restaurant in Macau, where has been impressing customers. South China Morning Post visited Ferrini in his kitchen, where he demonstrated his techniques.
