Hot cross buns are an Easter staple, but making them yourself can be time-consuming and difficult. Try this simple microwave mug-cake version instead to get all the traditional taste with less than half the effort.

If you do want to try making traditional hot cross buns, here's our recipe

Ingredients (serves two):

  • 30g butter
  • 1 medium egg
  • 2 tbsp milk
  • 6 tbsp soft light brown sugar
  • 4 tbsp raisins (or 3 tbsp raisins, 1 tbsp chocolate chips)
  • 6 tbsp self-raising flour
  • 2 tsp cocoa powder or icing sugar

Instructions:

1 Microwave the butter in a large mug for about 20 seconds, or until melted.

2 Add the egg, milk, brown sugar and flour to the mug and stir until it makes a smooth batter.

3 Gently stir in the raisins.

4 Microwave your mug cake for about 2 minutes.

5 Dust the top with the cocoa powder or icing sugar.

If you want that hot-cross-bun look, make a cross with two strips of aluminium foil or chopsticks laid across the top of your cake before dusting with cocoa powder.

You can also slide a knife around the edge of the mug after cooking to loosen the cake enough to remove it from the mug. Then you can cut it in half and enjoy it with butter just like a real hot cross bun.
