For Japan’s adventurous eaters, bear is on the menu

With a Japanese government-authorised bear cull in effect, bear meat is showing up on more menus and even winning over diners.

Japan has recorded a record number of bear attacks in 2025, resulting in at least 13 fatalities. In response, local governments have authorised culls to reduce bear populations. Meat from the hunts, once seen as a rare dish served only in restaurants in the country’s north, is making its way into more menus and even finding a receptive audience among adventurous eaters.
