Mauritian chef Smita Grosse began her career in the hotel industry at the age of 16, where she worked her way through the French to the Asian kitchen. But it was the art of pastry- making where Chef Grosse found her calling, taking her from the Shangri-La Hotel Dubai, the Carnival Cruise Line, to her current post as the first female executive pastry chef at the Grand Hyatt Hong Kong. In July 2022, she accepted a commission to create 100 pieces of eye-catching dessert for the opening gala dinner of the Big Eight – Dinosaur Revelation exhibition. She shows the Post’s Regina de Luna how she rose to the challenge of creating a ferociously delectable chocolate dinosaur.
