Executive chef Uwe Opocensky uses a creative approach to dishes that highlight seasonal ingredients. Dinner features three- to five-course tasting menus with dishes such as Japanese uni in chawanmushi with fennel and bouillabaisse jelly, and Brittany blue lobster with preserved fig, chervil root and Swiss chard.
