The Chairman is known for turning Chinese cuisine on its head, utilising classic ingredients and flavours but in innovative and surprising ways. A good example is the slipper lobster congee, without a grain of rice visible in the porridge: al dente lobster swims in a fragrant and smooth rice broth – an exceptional dish through and through.
