Start your weekend with a trio of up-and-coming local bartenders at Gossip, before heading over to Galaxy Macau to try the newly opened Pony & Plume at Capella. Kick off the last weekend in February at Gossip with its latest edition of Whispered Pours, which promises themed cocktail demos, talks and six signature drinks for the evening. This edition spotlights Cantonese culture via a trio of Hong Kong female bartenders who make up the Charming Drink Lady Instagram account: Kosa Law of ohm … Cafe and Bar, and Flora Lo and Fany Fong of Clan & Company community bar.

Head over to Macau as Capella at Galaxy Macau proudly presents Pony & Plume, which boasts a massive collection of over 650 individual and curated whiskies courtesy of consultant Blair Bowman. Pony & Plume promises a strong experience for both the experienced and under-initiated – the latter can sample drams via whisky flights or opt for a cocktail menu developed by mixologist Billy Choi.

The menu is split into two acts – A Vintage Journey in Smoke and Sip the Now – which look at Macau’s history and modernity respectively, via cocktails like the Island Libre, which adds Laphroaig 10 to Ron Zacapa 23 Rum and spiced cola, or the Umami martini, adding lychee, olive and sea salt to the classic recipe.
