JW Marriott’s Fish Bar is leaning into springtime dining with artistic elements in its Colouring Nature tasting menu. Similarly, springtime flavours – and colours – are being celebrated with Pandan Man and Silk’s newest collaboration; and Michelin-starred Caprice is embracing the lighter evenings and shorter dinners with its new “refined power dinner”.

It’s common knowledge that art month in the city doesn’t limit itself to galleries and large-scale art events. Hong Kong’s restaurants are always quick to offer a menu or special dish that’s on theme. And this art month, Fish Bar goes one step further with an artistic culinary journey that celebrates the beauty of nature and showcases a symphony of colours.
Created using sustainable seafood, the Colouring Nature: Exotica Umami tasting menu is a four-course dinner made in partnership with Exotica Umami – a versatile sauce reinvented from an ancient Roman marinade. Served at the alfresco seafood restaurant inside the JW Marriott Hotel, the dinner includes dishes including an artfully presented “cod mosaic”, a refreshing tuna tartare made with house-grown perilla from the JW garden, and prawn tacos with braised tofu and Exotica Umami aioli.
