Christmas has come early in Hong Kong this week. Several of the city’s top bars are hosting exciting pop-ups and collaborations – from a visiting Japanese legend to a top American talent – that ought not to be missed. So grab your thickest down jacket in case it drops to a chilly 20 degrees and look forward to these four nights of quality concoctions.

001 x Shui Kee

What: If you’re looking to have quality local bites paired with a world-class cocktail, look no further than the storied interiors of Tai Kwun. There, Hong Kong’s OG speakeasy, 001, is partnering with dai pai dong Shui Kee to serve crispy fried wontons, beef brisket noodles, offal, ox tongue and more.

The menu is only available during the weekdays as the dishes come fresh from Shui Kee, but 001 has yet to decide when the collaboration ends, so visit while you can!

When: Sunday to Thursday, 5pm to midnight; Friday to Saturday, 5pm-1am
