Conserver of traditional dim-sum kicks off his morning in the middle of the night

Chui Kwok-hing is a dedicated traditional dim sum chef who starts his day at 1am every day. What’s considered to be the middle of the night for most people is when his alarm goes off. Sun-hing, his restaurant in Kennedy Town, opens its doors at 3am to service the working class and students of of Hong Kong.
