How a teamaker revived a long-lost Chinese tea ceremony in 21st-century Hong Kong

Janice Zhu, a co-founder and tutor of the Hong Kong tea shop Yuentea, holds regular public classes on performing a Chinese tea ceremony. The process includes a special technique for rapidly whipping tea after water is added and how to paint on its surface in a manner reminiscent of the Japanese practice of chado, which has a surprising resemblance to modern latte art. The ancient tea ceremony known as dian cha was originally established in China during the Song dynasty. Dian cha requires significantly more time and effort than modern tea brewing methods and involves complex cultural traditions.
