Brief encounters: the rise of Hong Kong’s foodie pop-ups

Culinary pop-ups have become ubiquitous in Hong Kong and it’s a trend driven by more than just the city’s exorbitantly high rents

Pop-ups are a reflection of the times. Whether they signal society’s constant hunger for something new, a leap of faith in unconventional concepts or a fear of commitment, temporary dining experiences have become commonplace in Hong Kong.

While the concept is not new, its modern iteration owes its rise to social media. In the 2010s, blogs and early Twitter users helped popularise the format by promoting events backed by celebrities and influencers, and invoking FOMO (the fear of missing out).

In Hong Kong, that formula has been bolstered by rising rents, the increasing use of RedNote and Instagram – the algorithms of which are attuned to fresh content – and a diner base that craves novelty. DJs have turned many a cafe into a dance floor over the past year, luxury brands have invested in months-long F&B activations, bar takeovers have become de rigueur for establishments that want to stay relevant and chefs have rolled out short-term menus that sometimes disappear before you’ve even heard of them.

And while pop-ups offer a brief boost in income and credibility in trying times, they also provide a rare creative space for cooks who don’t fit the traditional mould and those who want to escape it. For Ron Wan, a photographer, graphic designer and “graphic dining” enthusiast, pop-ups also represent a challenge to the status quo.

“Hong Kong is such a ‘foodie’ city, yet it can be quite conservative and easily spooked,” he says. “That’s precisely what we’re trying to challenge with our pop-ups.”
