It might be Japanese for "hidden", but URA Japanese Delicacy was not hard to find. Located at the cusp of Central and Sheung Wan, the hip Japanese eatery is the latest brainchild of the Chang brothers, who also own nearby Indonesian restaurant IR1968.
The main dining area was fully booked so we sat at the speakeasy-like bar area. The restaurant also has a large terrace that is a good area for after-dinner drinks. We started off with two signature drinks: Kyoho (HK$148), a refreshing aviation gin, blackberry and lime-leaf syrup cocktail, and Suigo (HK$138), a strawberry mocktail served with a pretty ice bowl filled with pomegranate seeds floating on top of the drink.

With ingredients flown in daily from Osaka, the menu offers tapas-style small bites, grilled meats, sashimi and sushi, and larger plates of rice bowls and sushi platters. We opted for the bluefin tuna tartare and braised kagoshima kurobuta pork belly, both HK$138, as appetisers. The tuna was jet-fresh and delicious, sliced and arranged like a flower, with a raw egg yolk on top. The tender pork belly was another winner which came with an addictive dressing.
For mains, we tried the wagyu yakiniku (HK$398), and the wagyu steak and sea urchin rice bowl (HK$438), which was not the best plan as the two dishes were similar. It was fun searing the wagyu beef strips before rolling them in kimchi and eating with rice, lettuce and nori sheets, but the kimchi overwhelmed the beef.
The macha bavarian and the custard pudding (both HK$68) were served chilled in coffee cups and made a sweet and comforting end to the meal.
