Although Amber opened 15 years ago, the restaurant was revamped last year, with a new direction from chef Richard Ekkebus. Offering prix-fixe menus only, the light modern cuisine features delicate dishes that are dairy- and gluten-free with reduced salt and sugar, in line with the global demand for healthier options.
