A man in Japan has done what French gourmets thought was impossible. Toshihide Takase, 76, has spent half his life figuring out how to farm a particular species of snails.

The species, which is used to make the French delicacy Burgundy escargot, is at risk of extinction and is particularly hard to breed. Can Takase’s home-bred snails rival the taste of snails foraged in the wild?
