The cuisines of the Middle East are varied, although there is quite a lot of overlap, and many countries say their version of a certain dish is the original. It’s too difficult (and too political) to get into that, so I won’t; I’ll just say that I love the food and am happy to eat it whenever I get the chance. Here are a few Middle Eastern dishes to make at home.

These recipes are best done on an wood-fired (or charcoal) grill, but can also be cooked in the oven.

I’ll admit that made-from-scratch falafel is much more difficult than using a boxed mix, but the results are worth it. We tell you how to make hummus, tzatziki and grilled aubergine too.
